CARROT AND APPLE KUGEL for Passover

CARROT AND APPLE KUGEL for Passover

¼ cup vegetable oil or melted margarine
4 cups finely grated carrots     
1 cup grated apples
1 tsp sugar   
1/3 - 1/2 cup matzo meal*
1/2 tsp ground nutmeg   
1 tsp lemon juice
1 tsp grated lemon peel   
½ - ¾ cup slivered almonds,(toasted)


*The amount depends on the amount of liquid produced from the grated carrots and apples; the more liquid, the more matzo meal you need.


Preheat oven to 350F.  Lightly spray or grease a 4-cup baking dish.

Combine all of the ingredients in a bowl, except ¼ cup toasted almonds, and mix until thoroughly moistened. If the mixture appears too firm you can add a tablespoon or two of vegetable oil.  Transfer the contents to the prepared baking dish, sprinkle with the toasted almonds and place in the oven for 20-30 minutes or until the mixture is heated through and a few brown spots appear on the top.  Serve hot or warm.
