Bean Salad

Bean Salad

Marinated Soybeans (plus other beans)
Combine in a bowl:
1/4 cup olive oil
1/3 cup cider vinegar
2/3 cup honey
I also added some balsamic vinegar
salt and pepper to taste

Add:
3 cups cooked soy beans (or kidney, chickpeas)
1/4 teaspoon basil
1/2 teaspoon garlic salt
1/2 teaspoon oregano
1/2 cup chopped dill pickles (optional)
1/2 cup chopped celery
1/2 cup chopped onion or scallions
1/2 cup chopped parsley
1/2 cup chopped green pepper (optional)
1 clove garlic minced

Mix well and chill several hours before serving
